The small amount produced for each crush and the use of an almost completely manual control system make it a product susceptible to minute, but multiple, variable. After the primary fermentation, the beer is bottled with a small addition of sugar to restart the secondary fermentation. In this phase the formation of the classic natural carbonation and of the so-called foaming takes place. This refermentation process continues as time passes, even more slowly. The more time passes, the more the taste evolves.
